This is a very nice idea that I got from the Italian tv show "La prova del cuoco", this is a program that is shown on Rai 1 every day at 12:00. I like this program but unfortunately I can see only on Saturdays. Anyway, there are many good chefs and nice people cooking, the cooking competition, the many high quality products they talk about and describe every day, the vegetables and fruit of the season that they use and the many suggestions that they give are REALLY useful.
This suggestion of using sweet corn flour for polenta is very interesting... mustard and thyme with pork are just perfect.So here is the recipe...

Nice idea for a change of pace with pork. I love La Prova del cuoco also. I use it as an Italian lesson as well when I can watch it. I am usually working on lunch myself.
I usually use bread crumbs , but I like the idea, I´ll try to use polenta next time, for sure
