Last week I bought half of a pumpkin so these last days I have put pumpkin everywhere in my dishes... I got the chance to try a lot of new recipes, from the classic once like pumpkin soup to risotto or some more different like pasta with pumpkin and anchoves. They will come soon here on my blog.

This risotto was really good, perfect if prepared "all'onda", as we say in Italian, which literally means "like waves". This means the risotto has be... not hard and not too liquid but very creamy. The combination pumpkin-pancetta-rosemary is just perfect!

Risotto is my favorite food as the combination of flavors you used here is fantastic!
Orchidea la prox volta prova a mettere a fine cottura, nei due minuti di riposo, una spolverata di timo e rosmarino... da libidine l'aroma che emana!!
