Spaghetti con pomodori freschi e uova di pesce nere per la giornata Nazionale Svedese


Here is a fresh and summery pasta dish... easy and quick to make but really tasty. The idea comes from a recipe I saw on TV, but of course I modified it a bit.

SPAGHETTI WITH FRESH TOMATOES AND BLACK ROE
(for 2 people)
Ingredients: 180 g spaghetti, 3 anchovies in oil (from the can), 3 big tomatoes, 2 Tbsp black roe, fresh chives, extra-virgin olive oil, salt.

Put some extra-virgin olive oil in a large pan, add anchovies and cook for 5 minutes. Take the skin off the tomatoes, cut them in small pieces and add them to the anchovies. Cook for 15-20 minutes. When the sauce is ready add chopped fresh chives and black roe. Cook spaghetti “al dente” in slightly salted water (not too much because anchovies and roe are very salty). Serve them with the sauce on top.

The National Day is celebrated in Sweden on June 6th. The day was made into a national day by the Swedish parliament only in 1983, before which it was just revered as the Swedish Flag Day. The tradition of celebrating this date began in the 1920s, in honor of the election of King Gustav Vasa in 1523, as this was considered the foundation of modern Sweden. This event does signify the end of the Danish-ruled Kalmar Union, so in a sense it is a marking of Swedish independence, though the event occurred so long ago that it does not have as strong of a presence in the social consciousness. In 2005 it became an official Swedish public holiday.

This afternoon, like every year on the 6th June, the Swedish Royal family was going on their traditional parade from the caste (in the middle of the city) to Skansen (the famous park) by horse carriage. The city was very crowded, not only by tourists but also by a lot of Swedes that were waiting on the street to see the Royal family... and I was one of them.

I joined some friends and found a perfect spot, in that place there were not so many people but only us... and when the King and Queen, the Prince and Princesses arrived they were greeting only us... that was really cool! I could see them from very close... the Queen and Princess were wearing the traditional Swedish dresses, very nice. And here are some photos I took...

Sì è vero, confermo quello che ha detto Saffron: è bello conoscere un po' in Svezia leggendo i tuoi post...e le foto sono sempre bellissime. Gli spaghetti poi ... sembrano buonissimi!

I've never tasted black roe before, but I bet it adds a lot of flavour to the spaghetti:)
