SWEET POTATO SOUP WITH ROSMARY
(4 people)
Ingredients: 1 big sweet potato, leek, fresh rosmary, water, extra-virgin olive oil, salt, bulgur.
Clean and wash the sweet potato, cut in small cubes. Put some chopped leek and fresh rosemary in a pan with extra-virgin olive oil and cook until the leek is soft. Add the sweet potato and cook for 10 minutes. Then add warm water and cook until the potato is soft. Take away the rosemary and blend everything with a hand blender. Bring the soup to boil and add bulgur (as much as you like) and cook for 10 minutes. Serve warm and garnish with fresh rosemary and good extra-virgin olive oil.

That last picture is really beautiful, makes the soup so moist and slurpy hehe :) I've tried this butternut squash, but am sure using sweet potatoes will be as great, thanks for sharing, cheers ! :)
