MINESTRA RICE AND MILK
Ingredients: milk, rice, nutmeg, butter, Grana Padano cheese, salt.

Boil milk. Add rice and salt and cook for 30-40 minutes until the rice is soft and minestra is creamy. At the end grate some nutmeg and Grana Padano.

Have you ever tried this minestra? I have been eating it since I was little, in my family it is a very common winter dish… but some of my friends find it strange and others do not even know it.
Today it was the perfect day for this… rainy and COLD! Here in Sweden changes happen really fast and drastically so if one day it is summer the day after you can find yourself in real winter…

Info&Research: NUTMEG.
The nutmegs Myristica are a genus of evergreen trees indigenous to tropical southeast Asia and Australasia. They are important for two spices derived from the fruit, nutmeg and mace.
Nutmeg is the actual seed of the tree, roughly egg-shaped and about 20-30 mm long and 15-18 mm wide, while mace is the dried "lacy" reddish covering or arillus of the seed.Several other commercial products are also produced from the trees, including essential oils, extracted oleoresins, and nutmeg butter.
Nutmeg and mace have similar taste qualities, nutmeg having a slightly sweeter and mace a more delicate flavor.

The store here sells a type much is thicker (because more rice), sometimes with raisins, but we call it rice pudding. The ingredients look similar, I like it very much, but not sure if the same as your minestra.

OHH, I have tasted the sweet version as dessert (with cinnamon and lemon zest), but the savoury version looks so promising too!!

I've never heard of this before, but it sounds delicious. I have had something similar though, with polenta instead of rice. Nutmeg is the key, it adds a wonderful flavor.

I hate rice,but my wife cooks these and it's the only thing I absolutely love.
