Fajitas de pollo

I like chicken fajitas a lot. I have been eating this dish here in Stockholm and also last year in Singapore in different Mexican restaurants. Today I tried to prepare it at home and I have to say... The result was pretty good!

CHICKEN FAJITAS
(for 2 people)
Ingredients: 4 flour tortillas, 2 chicken breasts (cut in cubes), 1 small piece of Cheddar cheese (cut in small cubes), 1 yellow pepper (cut in stripes), 6-8 pieces dry porcini, 1 small chopped red onion, 1 garlic clove, 1 small chopped red chili pepper, extra-virgin olive oil, salt, 4 Tbsp water.
To put on top: guacamole, gräddfil (the Swedish version of sour cream).

Sauté chopped onion with garlic clove and yellow pepper in oil over medium heat until the onion is translucent. Take away the garic clove. Increase heat to high and add chicken, cook for about 15 minutes. Add salt, chili pepper, mushrooms and water, simmer for about 5 minutes.When the chicken is ready add the cheese on top and let the mixture on heat for 2 minutes.
Heat tortillas in oven for a few minutes.
Serve fajitas by placing 1/4 cup of chicken mixture in center of tortilla that is warm, add desired condiments (guacamole and/or sour cream) and roll up tortilla.
