6th June - Swedish National Day
The Royal Family is celebrating the Swedish National Day in Skansen with a speech, there will be music and dances.

In Stockholm there are at least 25 degrees, sun and a beautiful blue sky… in only a week we passed from winter to summer. There is so much light now… the sky is light until 23:00 and even after that it never becomes black, but it is a dark blue color. I have been living in Stockholm for a while but every year when summer comes I am surprised for the big change… and going from a really dark and long winter to such a light summer.
With this warm weather I fell like sitting outside and eating pasta salad… perfect for a picnic in the park on a holiday afternoon.
FRESH TUNA FISH PASTA SALAD
(for 2 people)
Ingredients: 80 g short size pasta (I used farfalle), 1 big slice of fresh tuna fish, 2 tomatoes, 1 red onion, ½ can sweet corn, 2 boiled eggs, extra-virgin olive oil, fresh parsley, salt, pepper.
Cook pasta “al dente” and let cool a bit. Clean, wash and chop onion, boil eggs and cut them. Wash tomatoes and cut them in cloves. Drain sweet corn. Cut the slice of tuna fish into small cubes, put them in a pan with a bit of extra virgin olive oil and cook for a few minutes. Take a big bowl and put all the ingredients together, add extra-virgin olive oil, salt, pepper and chopped fresh parsley. Mix well all indredients and keep in the fridge for some hours before serving.
