Gazpacho de Sevilla

The thermometer outside my window indicates 32.6 degrees... another beautiful hot summer day. I need something really fresh… here I prepared gazpacho. I tried gazpacho for the first time some years ago in Barcelona and loved it. I got this recipe from a lady from Seville, it seems to be an old family recipe.
… and after lunch I will walk down town near the water, sit and get tan and maybe swim.

GAZPACHO FROM SEVILLE
Ingredients: ½ kg tomatoes, 250 g red pepper, 250 g cucumber, 1 garlic clove, 200-300 g bread, 125 ml extra-virgin olive oil, 3 tbsp vinegar, salt.

Wash cucumber and cut in small pieces. Wash and clean tomatoes and cut them in small pieces. Wash and cut red pepper in small pieces. Cut bread in small pieces too. Put everything in a large bowl. Squeeze garlic clove and add it to the vegetables together with salt, vinegar and oil, poured a bit at a time while stirring. Keep the mixture in fridge for at least 1 hour. After one hour put the mixture in a blender, then pass it through a sieve. Add water (as much you like) and put it again in the fridge for an hour or so. Serve cold with finely chopped cucumber, red pepper, tomatoes or bread.

I love gazpacho too :-) In fact, I prepared it two days ago. It's so refreshing!

My gazpacho is very similar to yours except for the use of red pepper, that I use green pepper.

Pocos platos encontraremos en la cocina española tan exquisitos como el gazpacho.
Es la mezcla perfecta de varias hortalizas.
Cuando haya fresas pondré un exquisito gazpacho de fresas.
