Tagliolini all'uovo con ragù di carne

I finally tested my brand new gadget... pasta machine. It is great!

EGG TAGLIOLINI
(for 2 people)
Ingredients: 100 g white wheat flour (you will get about 170 g pasta), 1 egg, 1-2 Tbsp water (only if necessary).

Mix all ingredients and work the dough for at least 20 minutes. Let it rest for about 30 minutes to allow the gluten to relax before roll it through the pasta machine.

Here is my tagliolini... ready to be cooked. Put tagliolini in boiling water with salt and cook them for 2-3 minutes.

MEAT SAUCE
Ingredients
: 200 g ground beef, 1 small onion, ½ carrot, 1 piece celery, 150 g can of tomato sauce, 2 dry bay leaves, fresh rosemary, 2 Tbsp extra-virgin olive oil, salt, pepper.

Chop onion, carrot and celery. Put them in a large saucepan with extra-virgin olive oil and cook until they are tender. Add meat and pepper, cook and stir until meat is brown. Stir in tomato sauce, bay leaves, rosemary and salt. Reduce heat to low; cover and simmer about 1 hour (if sauce is too thick add water), stirring occasionally.

Serve tagliolini with meat sauce and grated Parmigiano Reggiano sprinkled on top.

Cannella, sì è proprio il tipico pranzo domenicale... mi piace mantenere le tradizioni.

Mae, it was really good! There is such a difference between fresh egg pasta that you make yourself and egg pasta that you buy...

Nothing beats home made pasta! And what about meeting in Stockholm in august when I come up? There will probably be a food blogger's meeting then.. And why don't you ping on Nyligen.se as well? Or maybe you do that?

Yes. Ilva, I will be in Stockholm the whole summer so I would be glad to join the food blogger's meeting.

Hello! Your pasta looks yummy. I didn't know that its that easy to make fresh pasta. You've inspired to me to go out tomorrow and get a the dough cutter! (My fiance would not be happy with the already huge amount of equipment I've been acquired!)

Thaks Steffles. I have just began testing my new gadget and already love it... every Italian family has the pasta machine and I could not be without. My mom, aunts and grandmothers have it...
It is very easy and you can try making pasta or noodles with different flours... and also mixing them. I will experiment more... I will make ravioli with a friend during the weekend.
