Pasta con zucchine e panna

This is my favorite pasta sauce...it is my mom’s recipe, she is a cook and has been making this sauce since I was little. It is very good!


PASTA WITH ZUCCHINI AND CREAM
(for 2 people)
Ingredients: 180 g pasta (any short size pasta, I used penne rigate), 1 small zucchini, 150 ml cream, Pamigiano Raggiano cheese (as much as you like), fresh basil (as much as you like), extra-virgin olive oil, salt.


Wash and cut zucchini in thin slices. Put them in a pan with a bit of extra-virgin olive oil and salt, cook until they are soft. In the mean while cook pasta. Add cream into the pan with zucchini and cook until it is absorbed. Add chopped fresh basil, grated Parmigiano Reggiano and salt if necessary. When pasta is “al dente” mix it with zucchini sauce and stir very well before serving.

Bentornata! Non ci crederai, ma ieri mezzogiorno, che eo da sola, mi son fatta esattamente questa pasta (stavolta però ho voluto ESAGGGGERARE e invece della panna c'ho messo il mascarpone, tanto per andare sul leggerino!). Baciotti

Non l'ho mai provato con il mascarpone... è buono? Una piccola bomba però...
